Jerked Halibut

Crushed Scotch Bonnet peppers

Seasoned salt

Red Stripe beer

Walker Jerk Seasoning

Mix seasonings, 1/2 of the beer and 1/2 bottle of Walker Jerk Seasoning. Rub seasoning mixture over the Halibut slices. Cover and refrigerate overnight to marinate.

The next day, bake marinated Halibut in 350F oven for 30 - 40 minutes, Or grill for 15 to 20 minutes. When Halibut has cooked for 30-40 minutes, remove from the oven and brush on the remainder of Walker Seasoning and the beer. Return Halibut to oven and return to the heat for an additional 10 minutes. Serves 4.
