topside or silver side beef

Place beef in roasting tin, cover with baking foil, place in pre warmed oven [375 F] for 20 minutes per lb. plus 20 mins. If you want to put roast potatoes in with the meat all you have to do is take the amount of potatoes needed, depending on how much you like roast potatoes, par boil for about 10-15 mins place in tin with meat for about half the cooking time. Oh and once the potatoes are in take off the foil, and continue to cook, at least that's how I do it!

solid bottom round or top round peice of beef

salt

pepper

Garlic powder

You will need to buy a nice 5-10 lb solid bottom round or top round peice of meat at your favorite market. When you prepare it salt and pepper and garlic powder rubbed over the whole piece. Then put good meat thermometer in thick of meat. Place in middle of your oven in pan with no cover. bake around 375 till doness shows up to the rare on thermometer. I think about 140 degrees. It will continue to cook a little more after its out of oven. This should give you a very good roast beef and will have some very good juises to pour over sandwich. Slice and serve.

Roast Beef Ultimate Cooking Tips

I have used both of the following variations. If you like rare roast, the cooking times are perfect. For medium or well done just extend cooking time up to 8 minutes per lb. on the first one and up to a half hour on the second. The secret is bring the meat to room temperature and DO NOT OPEN THE OVEN DOOR.

Bring meat to room temperature. Preheat oven to 500 degrees. Season top round, rib roast or good cut of beef with coarse pepper & garlic salt. Place roast in roasting pan cook 5 mins per lb. (if using bone in roast cook 6 mins. per lb.) Do not open door, let sit at least 1-1/2 hours in oven before removing.

Preheat oven to 350 degrees. season 6-8 lb. boneless beef roast with coarse pepper & garlic salt. put in shallow roaster and roast for 1 hour. Turn oven off-let meat sit in oven. Do not open oven door. Turn oven back on at 350 for 1/2 hour before serving. If you want the roast for dinner-do this by 1:00 p.m.
